Due to a lot of things happening with my body, I wasn’t too inspired to create in the kitchen. However, I found a blog called Vegan Richa and she somehow revived my love for cooking all over again. I still haven’t had much time to get super creative in the kitchen but I’ve been able to do a little sumthin sumthin.
Her food blog is like no other food blog. The way she incorporates Indian and Asian spices into vegan recipes is mind-blowing. Richa is very good at creating ways to enjoy foods you eat all of the time. As a person with a vegan diet, it is sometimes hard to keep my taste buds satisfied. Well Richa does not disappoint with the differentiation of flavors.

Keep in mind I don’t usually copy a recipe verbatim. I tend to use the recipes for inspiration. All of dishes were delicious and easy to make. If you’re looking for inspiration, check out her blog.
One other thing that I’ve been obsessed with is smoked tofu. I know I’m probably late to the game, but hunny, I’m just glad I showed up! Smoked tofu has been a lifesaver because it creates less cooking time for me on meal prep days. Smoked tofu is ready to eat out the pack so you can pop it in a salad or even make a sandwich. If you haven’t tried smoked tofu and are not dodging soy products, do yourself a favor and give it a try. Let me know what has been some of you favorite food dishes.
